Atmosphere: Whimsical and theatrical, with opulent decor that’s a feast for the eyes.

Must-try: The Colour Changing One will have all eyes on you as your drink transforms from one colour to another. Made with Reyka vodka, briottet apple, lemonade, citrus “and magic”. The bar’s signature is a cocktail masquerading as a smouldering potion, so look out for any on the menu with “smoke”. Winter specials include the Gin-gerbread and Winter Rum Punch.

Atmosphere: Lively and stylish with a striking olive tree that drapes across the ceiling. This is the go-to place for celebrating with a motto of ‘Con Amici’ (eating with friends), so expect plenty of laughter and that warm Liverpudlian welcome.

Must-try: Fruit cocktails are the flavour of the menu with a martini list to rival them all, including Strawberry & Vanilla, Elderflower & Peach and Grapefruit.

Alma De Cuba

Where: St Peters' Church, Seel Street, Liverpool, Merseyside L1 4BH

Atmosphere: A converted former church (St. Peter’s Catholic Church). The magnificent altar still stands and impresses, often as the centre stage for their thrilling Latin American fiestas. Every Friday and Saturday at 11pm, a petal shower rains down from their spectacular high ceilings, showering the bar in flowers.

Must-try: Given that the theme is Latin American, you’ll want to try the Cuban-inspired cocktails. The Don blends Maker’s Mark, Santa Teresa Rhum Orange, Luxardo maraschino liqueur, Orgeat Syrup, stirred with chocolate bitters. No need to choose carefully because it’s buy one, get one free all day Monday - Thursday on all cocktails.

Castle Street Townhouse

Atmosphere: Eclectic, with a mix of business and pleasure thanks to its location bordering the commercial district and city centre. The decor is decadent with emerald green velvet furnishings and rich brown chesterfield sofas, paying homage to New York City’s pristine socialite culture.

Must-try: Cocktails are available all day, with a “Breakfast” section on the menu. The Mimosas and Bloody Marys are a given, but if you’re a fan of sweet, give the Blueberry Muffin a try - made with Absolut Blue, gingerbread syrup, blueberry jam, cranberry and lemon juice. Look out for their seasonally inspired festive cocktails.
